USE THE FORKS!
Star Wars Cooking

I happen to like nice men, and Han Solo is a nice man… occasionally, when he’s not acting like a scoundrel. But at least he’s a scoundrel for the good guys!

With the new Solo movie coming out really soon, I thought I’d take a moment to honor all the different versions of Han. There’s reluctant hero Han from A New Hope; noble, fluffy-haired Han from The Empire Strikes Back; troop commanding, jealous of Luke (when it comes to Leia) Han from Return of the Jedi; and grumpy old man, back to his old tricks Han from The Force Awakens.

But one of my very favorite versions of Han, isn’t even called Han at all! It’s Ham Salad from Hardware Wars.

In another part of the galaxy, later that same day, Ham Salad along with a brown Cookie Monster named Chewchilla, Fluke Starbucker, and Augie “Ben” Doggie, pilot their flying iron through light speed to save Princess Anne-Droid from Darph Nader. You bet your asteroid Ham is the same ace mercenary pilot, and intergalactic wise-guy, he’s always been. But this time he’s much more willing to follow Anne-Droid’s lead. The whole thing is perfectly 70’s (awful special effects), and still really hilarious to this day. Ham Salad has all the best lines (“Take it easy kid, it’s only a movie!”) and I especially like his weapon of choice: a laser-shooting electric drill!

As much as I love the many different versions of Han SoIo, I’m really look forward to seeing young, ambitious Han (and super smooth Lando) on May 25th!

Serves 4

Ingredients:
• 2 hard-boiled eggs, chopped
• 2 cups cubed ham or 4 veggie hot dogs
• 1 cup diced celery
• 1/4 cup diced onion
• 1 teaspoon Dijon mustard
• 1/4 cup relish
• 1/2 cup mayonnaise
• salt and pepper to taste

Directions:
1. Hard boil your eggs first by placing them in a small pot, covering them with water, and bringing the water to a rolling boil.
2. Once the water is boiling, remove the pan from the heat, cover with a lid, and allow the eggs to sit for 10-12 minutes, before removing to an ice bath to cool completely.
3. While your eggs are cooling, process the ham cubes or veggie hot dogs in a food processor until spreadable but still kinda chunky.
4. Add to a bowl along with celery, onion, mustard, chopped eggs, relish, and mayonnaise.
5. Fold together with a spatula until everything is evenly distributed.
6. Add salt and pepper to taste.
7. Spread onto slices of white bread, or scoop with crackers.
8. I’ve got a GOOD feeling about this!
